Mandarin Syrup Cake

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1 None mandarin orange, peel grated
  • 2 None eggs, lightly beaten
  • 1 cup plain yogurt
  • 2 tbsp mandarin orange juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan and line with parchment paper.
  2. For the cake, sift flour, sugar and baking powder into a large bowl. Stir in orange peel. Add eggs, yogurt, juice and vanilla. Mix until just combined. Pour into prepared pan, smoothing top.
  3. Bake for 45 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
  4. Meanwhile, for the syrup, simmer juice with sugar in small saucepan on low heat for 5 mins, or until reduced and syrupy. Stir in remaining peel. Place cake on a platter. Using a skewer, pierce a few holes in top of cake. While cake is still warm, slowly pour half the syrup over the top, until it is absorbed. Slice cake and drizzle with remaining syrup to serve.
