Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (4 oz.) can shredded coconut
  • 1/4 cup butter or margarine
  • 3/4 cup sugar
  • 1 egg
  • 1/2 teaspoon maple flavoring
  • 1/4 cup chopped walnuts

Instructions

  1. Stir together flour, baking powder, and salt.
  2. Reserve 1/2 cup of shredded coconut for topping and finely chop the remaining coconut.
  3. In a small mixer bowl, beat 1/4 cup butter or margarine until softened.
  4. Add sugar and beat until well combined.
  5. Add egg and maple flavoring and beat just until combined.
  6. Add flour mixture and beat until well mixed.
  7. Stir in the finely chopped coconut and chopped walnuts.
  8. Spread the mixture in a greased 8 x 8 x 2-inch baking pan.
  9. Combine the reserved 1/2 cup shredded coconut with 1 tablespoon melted butter and sprinkle over the mixture in the pan.
  10. Bake in a 350°F (175°C) oven about 30 minutes or until done.
  11. Cool the bars.
  12. Cut into 24 bars.
