Ingredients

  • 2 c. sifted all-purpose flour
  • 3/4 c. brown sugar
  • 3/4 c. white sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. Wesson oil
  • 7 beaten egg yolks
  • 3/4 c. cold water
  • 2 tsp. maple flavoring
  • 1/2 tsp. cream of tartar
  • 1 c. egg whites

Instructions

  1. Heat oven to 325°F (163°C).
  2. Sift the all-purpose flour, brown sugar, white sugar, baking powder, and salt together in a mixing bowl.
  3. Make a well in the center; add Wesson oil, beaten egg yolks, cold water, and maple flavoring.
  4. Beat until smooth with a spoon or mixer on medium speed.
  5. In a large mixing bowl, add cream of tartar to egg whites and beat until whites are very stiff.
  6. Gradually pour the egg yolk mixture over the beaten egg whites, gently folding with a rubber scraper just until blended.
  7. Pour the batter into an ungreased 10 x 14-inch tube pan.
  8. Bake at 325°F (163°C) for 55 minutes, then increase temperature to 350°F (177°C) and bake for an additional 10 to 15 minutes.
  9. Turn the pan upside down on a bottle until the cake is completely cold.
