- Heat oven to 325°F (163°C).
- Sift the all-purpose flour, brown sugar, white sugar, baking powder, and salt together in a mixing bowl.
- Make a well in the center; add Wesson oil, beaten egg yolks, cold water, and maple flavoring.
- Beat until smooth with a spoon or mixer on medium speed.
- In a large mixing bowl, add cream of tartar to egg whites and beat until whites are very stiff.
- Gradually pour the egg yolk mixture over the beaten egg whites, gently folding with a rubber scraper just until blended.
- Pour the batter into an ungreased 10 x 14-inch tube pan.
- Bake at 325°F (163°C) for 55 minutes, then increase temperature to 350°F (177°C) and bake for an additional 10 to 15 minutes.
- Turn the pan upside down on a bottle until the cake is completely cold.
