Maple Pumpkin Muffins

Ingredients

  • 1 3/4 c. flour (all-purpose)
  • 1/2 c. firmly packed light brown sugar
  • 1 Tbsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1 c. canned pumpkin
  • 1 egg, beaten
  • 1/2 c. pure maple syrup
  • 1/3 c. margarine or butter, melted

Instructions

  1. Preheat oven to 350°.
  2. In large bowl, stir together flour, sugar, baking powder and spice; set aside.
  3. Combine remaining ingredients.
  4. Stir into dry ingredients just until blended (do not overmix).
  5. Fill paper lined or greased muffin pan 3/4 full.
  6. Bake 20 to 25 minutes or until golden brown.
  7. Cool 5 minutes.
  8. Remove from pan.
  9. Serve warm.
  10. Makes about 18.
