- Bake sweet potatoes for 50 to 60 minutes or until easily pierced with a fork.
- Remove from oven and cool slightly. Slice potatoes in half lengthwise.
- Scoop out the pulp, leaving a 1/2-inch thick shell.
- Place shells in a 13 x 9-inch pan and transfer pulp to a food processor or blender.
- Add remaining ingredients and process or blend until smooth.
- Spoon the mixture evenly into the shells.
- Return to oven and bake for an additional 5 to 10 minutes, until heated through.
- Serve warm, especially suitable for holiday occasions like Thanksgiving.
