Maple Stuffed Sweet Potato

Sweet potatoes are baked to perfection and filled with a creamy maple yogurt mixture, creating a comforting, naturally sweet dish ideal for holiday gatherings or cozy dinners.

Ingredients

  • 8 sweet potatoes (4 oz. each)
  • 6 Tbsp. plain nonfat yogurt
  • 2 Tbsp. light maple syrup
  • 2 Tbsp. orange juice
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Bake sweet potatoes for 50 to 60 minutes or until easily pierced with a fork.
  3. Remove from oven and cool slightly. Slice potatoes in half lengthwise.
  4. Scoop out the pulp, leaving a 1/2-inch thick shell.
  5. Place shells in a 13 x 9-inch pan and transfer pulp to a food processor or blender.
  6. Add remaining ingredients and process or blend until smooth.
  7. Spoon the mixture evenly into the shells.
  8. Return to oven and bake for an additional 5 to 10 minutes, until heated through.
  9. Serve warm, especially suitable for holiday occasions like Thanksgiving.
