Ingredients

  • 1 cup apricots
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup nuts (optional)
  • 2 cups flour
  • 1 cup sugar
  • 2 tablespoons butter
  • 1 egg
  • 3/4 cup orange juice
  • 2 teaspoons baking powder

Instructions

  1. Soak apricots in warm water for 30 minutes.
  2. Drain apricots and cut into quarters.
  3. Cream together butter, sugar, and egg.
  4. Blend in apricots and orange juice.
  5. Add dry ingredients: flour, baking soda, salt, and baking powder.
  6. Mix until just combined and bake as desired.
