Ingredients

  • 3 eggs
  • 1 c. vegetable oil
  • 2 1/4 c. sugar
  • 2 c. grated zucchini, unpeeled
  • 3 tsp. vanilla
  • 3 c. sifted flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1 c. chopped pecans

Instructions

  1. Preheat oven to 325°F and grease two 8-inch loaf pans.
  2. Mix eggs, vegetable oil, sugar, vanilla, and grated zucchini until well blended.
  3. Fold in sifted flour, salt, soda, cinnamon, baking powder, and chopped pecans.
  4. Pour batter into the prepared loaf pans.
  5. Bake approximately 1 hour or until a toothpick inserted into the center comes out clean.
