A refreshing chilled potato salad featuring tender new potatoes marinated in Italian dressing, complemented by fresh herbs and pimiento, perfect for summer gatherings or light lunches.

Ingredients

  • 2 lb. small new potatoes, unpeeled
  • 2 (.7 oz.) pkg. Italian salad dressing mix
  • 1/4 c. minced green onions
  • 3 Tbsp. minced fresh parsley
  • 1 (2 oz.) jar diced pimiento, drained
  • leaf lettuce

Instructions

  1. Cook potatoes in boiling water to cover for 10 to 15 minutes or until tender. Drain and let cool.
  2. Cut potatoes into 1/4-inch slices and arrange in a shallow serving dish. Set aside.
  3. Prepare salad dressing mix according to package directions. Stir in green onions, parsley, and pimiento.
  4. Pour dressing over potatoes. Cover and chill.
  5. Spoon potatoes over lettuce leaves, using a slotted spoon.
