Ingredients

  • 3/4 cup margarine
  • 1/3 cup brown sugar
  • 1 1/2 cups flour
  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 2 cups sugar
  • 8 oz. jar cherries, chopped
  • 1/2 cup chopped almonds
  • 3 drops red food coloring
  • 1/2 teaspoon almond extract
  • Cherry juice and water (enough to make 1/2 cup)

Instructions

  1. Combine margarine, brown sugar, and flour and press into an ungreased pan.
  2. Bake in a 325°F oven for 30 minutes; let cool.
  3. Soften gelatin in cold water.
  4. Combine sugar drained from cherries, cherry juice, and water to make 1/2 cup.
  5. Bring to a boil and boil for 2 minutes.
  6. Remove from heat and stir in softened gelatin.
  7. Beat at medium speed until very stiff, about 20 minutes.
  8. Fold in cherries, chopped almonds, red food coloring, and almond extract.
  9. Spread the marshmallow mixture over the baked crust.
  10. Let stand at room temperature until it sets.
