- Set the pie crust out to thaw while preparing the custard filling.
- Preheat oven to 450°F.
- Beat the eggs in a mixing bowl.
- Scald the milks until hot but not boiling.
- Mix sugar, salt, and cornstarch together in a separate bowl.
- Add the sugar mixture to the beaten eggs while beating on low speed.
- Add vanilla extract to the mixture.
- Slowly pour in the hot milk while continuing to mix.
- Mix well until smooth.
- Pour the custard mixture into the unbaked pie shell slowly.
- Bake at 450°F for 5 minutes.
- Reduce oven temperature to 425°F and bake for another 5 minutes.
- Reduce oven temperature to 375°F and bake for 10 minutes.
- Then reduce the temperature to 325°F and bake until the center is set, about 10-15 minutes.
- Test the pie by gently shaking; the filling should be slightly jiggly but not liquid.
- Remove from oven and let cool slightly.
- Dot the top with butter.
