Ingredients

  • 5 eggs
  • 3/4 cup sugar
  • 2 dashes salt
  • 1 tablespoon cornstarch
  • 1 tablespoon plus 1/2 teaspoon vanilla extract
  • 2 cups milk (large can evaporated plus 1/2 cup homogenized)
  • 1 unbaked 9-inch pie crust (frozen)
  • 1 tablespoon pure butter

Instructions

  1. Set the pie crust out to thaw while preparing the custard filling.
  2. Preheat oven to 450°F.
  3. Beat the eggs in a mixing bowl.
  4. Scald the milks until hot but not boiling.
  5. Mix sugar, salt, and cornstarch together in a separate bowl.
  6. Add the sugar mixture to the beaten eggs while beating on low speed.
  7. Add vanilla extract to the mixture.
  8. Slowly pour in the hot milk while continuing to mix.
  9. Mix well until smooth.
  10. Pour the custard mixture into the unbaked pie shell slowly.
  11. Bake at 450°F for 5 minutes.
  12. Reduce oven temperature to 425°F and bake for another 5 minutes.
  13. Reduce oven temperature to 375°F and bake for 10 minutes.
  14. Then reduce the temperature to 325°F and bake until the center is set, about 10-15 minutes.
  15. Test the pie by gently shaking; the filling should be slightly jiggly but not liquid.
  16. Remove from oven and let cool slightly.
  17. Dot the top with butter.
