Ingredients

  • 1-1/4 cups cornmeal
  • 1 cup flour
  • 1/3 cup packed brown sugar
  • 1/3 cup white sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 3/4 cup vegetable oil

Instructions

  1. Combine cornmeal, flour, brown sugar, white sugar, baking soda, and salt in a mixing bowl.
  2. In a separate bowl, beat the egg with buttermilk and vegetable oil until well combined.
  3. Stir the wet ingredients into the dry ingredients just until moistened.
  4. Fill greased or paper-lined muffin cups 3/4 full with the batter.
  5. Bake at 425°F (220°C) for 12 to 15 minutes until golden brown and a toothpick inserted into the center comes out clean.
