Ingredients

  • 1 3/4 cups flour
  • 1/4 cup milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 cup vegetable oil
  • 1 cup fresh zucchini, grated
  • raisins (optional)

Instructions

  1. Mix dry ingredients (flour, sugar, salt, baking soda, baking powder) in a bowl.
  2. Add vegetable oil, grated zucchini, eggs, and milk to the dry mixture and stir until just blended.
  3. Pour the batter into a greased loaf pan.
  4. Bake at 350°F (175°C) for 50 to 55 minutes until a toothpick inserted in the center comes out clean.
