Ingredients

  • 1 c. mashed potatoes
  • 4 Tbsp. melted butter
  • 1 c. milk
  • 2 eggs
  • 1 c. sugar
  • pinch of salt
  • pinch of nutmeg
  • 1/2 tsp. vanilla
  • 2 1/2 c. flour

Instructions

  1. Mix mashed potatoes, melted butter, and milk until well combined.
  2. In a separate bowl, beat eggs, sugar, vanilla, salt, and nutmeg.
  3. Combine the potato mixture with the egg mixture, then add flour and baking powder.
  4. Mix thoroughly until a smooth batter forms.
  5. Place the batter in the refrigerator and chill for one hour.
  6. Preheat a donut maker or prepare for frying.
  7. If using a donut maker, fill and cook according to device instructions.
  8. Alternatively, fry the donuts at 375°F until golden brown.
