Ingredients

  • 4 eggs, separated
  • 2/3 cup sugar
  • 2 cups grated apples
  • 1/2 cup matzo meal
  • 4 tablespoons chopped almonds

Instructions

  1. Stir the sugar with the beaten egg yolks.
  2. Add grated apples, lemon rind, matzo meal, and chopped almonds.
  3. Gently fold in the stiffly beaten egg whites.
  4. Pour the mixture into a greased souffle dish.
  5. Bake in a preheated oven at 350°F (175°C) for 45 minutes.
