Creamy, cheesy Maui Potatoes combine hash browns, mushrooms, green onions, and sharp cheddar for a comforting side dish perfect for family gatherings or casual dinners.

Ingredients

  • 1 family pkg. frozen hash browns
  • 1 can sliced mushrooms, drained
  • 1 small bunch diced green onions
  • 1 stick margarine
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Put the frozen hash browns in a 9 x 13-inch pan.
  2. Sprinkle drained sliced mushrooms over the hash browns.
  3. Sprinkle diced green onions over the mushrooms.
  4. In a saucepan, melt margarine, then stir in the cream of chicken soup, sour cream, and shredded cheddar cheese until smooth and heated through.
  5. Pour the cheese mixture over the potatoes and bake at 325°F for 30 to 40 minutes until bubbly and golden.
