Ingredients

  • 4 Tbsp. cornstarch
  • 2 egg yolks
  • 1 c. sugar
  • 2 Tbsp. butter
  • 1 1/4 c. boiling water
  • 4 Tbsp. lemon juice
  • 1 tsp. grated lemon rind

Instructions

  1. Mix cornstarch and sugar, then add boiling water and stir.
  2. Cook the mixture until there is no raw starch taste.
  3. Beat egg yolks and slowly add them to the hot mixture, cooking over low heat until the eggs are cooked.
  4. Add butter, lemon juice, and grated lemon rind, then cool.
  5. Pour the filling into a baked pie shell and cover with meringue, ensuring the meringue touches all around the crust.
