Ingredients

  • 1 1/2 cups cooked rice
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 10 oz frozen chopped spinach
  • 1/2 cup shredded Mozzarella cheese
  • 5 eggs
  • 1 cup skim milk
  • 1 tablespoon instant minced onion
  • 1/2 teaspoon crushed basil leaves
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven and spray a baking dish with vegetable spray.
  2. In a bowl, combine cooked rice, slightly beaten egg, grated Parmesan cheese, thawed and drained chopped spinach, shredded Mozzarella cheese, eggs, skim milk, instant minced onion, crushed basil leaves, and salt.
  3. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into the prepared baking dish.
  5. Bake in the preheated oven for approximately 45 minutes or until the quiche is set and golden brown on top.
  6. Allow to cool slightly before slicing and serving.
