Ingredients

  • 1 lb. lean ground beef
  • 2 Tbsp. taco seasoning mix
  • 2 Tbsp. ice water
  • 1 c. sour cream
  • 2 Tbsp. taco sauce
  • 2 oz. chopped ripe olives
  • 3/4 c. tortilla chips
  • 1/2 c. shredded Cheddar cheese

Instructions

  1. Mix the ground beef, taco seasoning mix, and cold water until well combined.
  2. Shape the beef mixture into mini tartlet shells using muffin pans.
  3. In a separate bowl, combine sour cream, taco sauce, chopped olives, and crushed tortilla chips.
  4. Place about one teaspoon of the sour cream mixture into each beef shell, mounding slightly.
  5. Sprinkle shredded Cheddar cheese on top of each filled tartlet.
  6. Bake in a preheated oven at 425°F for 7 to 8 minutes.
  7. Remove from the oven and carefully take the tartlets out of the pans.
  8. Serve immediately or freeze and reheat at 375°F for 10 to 15 minutes.
