Ingredients

  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1/2 cup olive oil
  • 1 tsp red pepper
  • 10 cloves garlic, minced
  • 1 Tbsp sugar
  • 2 bay leaves
  • 3 Tbsp flour
  • 6 Tbsp cornmeal
  • 2 lb lean beef, coarsely ground
  • 1 quart water
  • 8 chili peppers
  • 3 tsp salt
  • 1 tsp pepper

Instructions

  1. In a large kettle, fry the ground beef in olive oil until dark brown.
  2. Add one quart of water, cover, and simmer for two hours.
  3. Add remaining ingredients, except for flour and cornmeal.
  4. Cook at a gentle simmer for 30 minutes, removing bay leaves after 15 minutes.
  5. Make a paste of flour, cornmeal, and water.
  6. Stir the paste into the mixture, cooking for another five minutes at a simmer while stirring often.
  7. Serve immediately with a fire extinguisher at your right elbow.
