Ingredients

  • 2 lb. ground beef
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • salt and pepper to taste
  • 1 c. cracker crumbs
  • 1 egg
  • 1 (8 oz.) can tomato sauce
  • 6 or 8 small potatoes

Instructions

  1. Mix all ingredients except potatoes in a large bowl.
  2. Shape mixture into a loaf.
  3. Grease the crock-pot.
  4. Wrap potatoes in foil and place them in the bottom of the crock-pot.
  5. Cut the potatoes in half, but do not peel.
  6. Place the meat loaf on top of the rack in the crock-pot.
  7. To make a full meal, use an aluminum pie pan that fits on top and add your vegetables.
  8. Add butter to the vegetables and wrap the pie tin in foil.
  9. Cook on low for 6 to 8 hours.
