Ingredients

  • 10 oz. frozen chopped spinach
  • 1/4 cup dry bread crumbs
  • 1 egg
  • 1 teaspoon garlic salt
  • 6 small cube steaks
  • 2 tablespoons oil
  • 1 envelope spaghetti sauce mix with mushrooms
  • 1 can (1 lb.) tomatoes

Instructions

  1. Combine the thawed spinach, bread crumbs, beaten egg, and garlic salt in a bowl.
  2. Spread a spoonful of the spinach mixture on each tenderized cube steak.
  3. Roll up each steak as for a jelly roll and fasten with wooden picks.
  4. Brown the rolls in oil in a large skillet over medium heat.
  5. Remove the browned meat rolls from the skillet.

Tips & Substitutions

For added flavor, consider mixing in some grated Parmesan cheese into the spinach mixture. If you don’t have cube steaks, flank steak or chicken breasts can be a great substitute. If you prefer a meat-free option, try using a mixture of cooked quinoa and finely chopped vegetables instead of meat for a vegetarian version.

Serving Suggestions

These meat rolls pair beautifully with a light salad or roasted vegetables. Serve them alongside a side of spaghetti tossed with Pop'S Spaghetti Sauce for a complete meal. For an Italian twist, consider serving with crusty bread for soaking up any sauce.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm them in a skillet over medium heat or in the microwave until heated through. Avoid overheating as it can make the meat tough.

Frequently Asked Questions

Can I prepare these meat rolls ahead of time?

What can I use instead of spaghetti sauce mix?

If you don’t have spaghetti sauce mix, you can create your own by combining dried herbs such as oregano, basil, and garlic powder with a bit of salt. Alternatively, using a jarred marinara sauce can also work well for a quick and easy substitution.

Can I freeze the meat rolls?

Yes, you can freeze the cooked meat rolls. Allow them to cool completely, then wrap them tightly in plastic wrap and place them in a freezer-safe container. They can be stored for up to 2 months. Thaw in the refrigerator before reheating.
