Meatballs Con Queso

Ingredients

  • 1 (12 to 14 oz.) pkg. corn bread mix
  • 1 1/2 lb. ground beef
  • 1 1/2 c. fresh bread crumbs
  • 3 white bread slices
  • 1/3 c. minced onion
  • 1/3 c. milk
  • 3 Tbsp. chopped parsley
  • 1/4 tsp. pepper
  • 1 egg
  • 3 Tbsp. salad ol
  • 1 (16 oz.) pkg. pasteurized process cheese spread, cubed
  • 1 (4 oz.) green chilies, minced
  • 1 (1 1/8 or 1 1/4 oz.) pkg. taco season mix

Instructions

  1. About 1 hour before serving, prepare corn bread mix as label directs.
  2. Keep warm.
  3. Meanwhile, in medium bowl, mix ground beef, bread crumbs, onion, milk, parsley, pepper and egg.
  4. Shape into 1-inch balls.
  5. In 10-inch skillet over medium-high heat in hot salad oil, cook meatballs, a few at a time, until well browned, removing them as they brown.
  6. Spoon off fat and wipe skillet clean.
  7. Into same skillet, over low heat, stir cheese, green chilies with their liquid, taco seasoning mix and 3/4 cup water until cheese is melted.
