Meatless Lasagne

Ingredients
- 1 large eggplant, sliced
- 1 cup chopped onion ⓘ
- 2 garlic cloves, minced ⓘ
- 1/4 cup margarine ⓘ
- 1 (15 1/2 oz.) jar spaghetti sauce
- 1 1/2 teaspoons Italian seasoning ⓘ
- 8 oz. lasagne noodles, cooked and drained ⓘ
- 1 cup cottage cheese ⓘ
- 1 (8 oz.) package Mozzarella cheese ⓘ
- 1/2 cup grated Parmesan cheese ⓘ
Instructions
- Preheat oven to 375°F.
- Saute eggplant and garlic in margarine until tender.
- Add spaghetti sauce and Italian seasoning; bring to a boil, then reduce heat and simmer for 10 minutes.
- Layer half of the cooked lasagne noodles in a 12 x 8-inch baking dish.
- Spread half of the sauce mixture over the noodles.
- Add half of the cottage cheese, mozzarella cheese, and Parmesan cheese.
- Repeat layers with remaining noodles, sauce, and cheeses.
- Cover and bake for 30 minutes.
- Let stand for 10 minutes before serving.
