Ingredients

  • 1 large eggplant, sliced
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1/4 cup margarine
  • 1 (15 1/2 oz.) jar spaghetti sauce
  • 1 1/2 teaspoons Italian seasoning
  • 8 oz. lasagne noodles, cooked and drained
  • 1 cup cottage cheese
  • 1 (8 oz.) package Mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F.
  2. Saute eggplant and garlic in margarine until tender.
  3. Add spaghetti sauce and Italian seasoning; bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Layer half of the cooked lasagne noodles in a 12 x 8-inch baking dish.
  5. Spread half of the sauce mixture over the noodles.
  6. Add half of the cottage cheese, mozzarella cheese, and Parmesan cheese.
  7. Repeat layers with remaining noodles, sauce, and cheeses.
  8. Cover and bake for 30 minutes.
  9. Let stand for 10 minutes before serving.
