Mediterranean Hash

Ingredients

  • 12 ounces Simply Potatoes Diced Potatoes with Onion
  • 3/4 cup sun-dried tomato (chopped)
  • 1 red bell pepper (chopped)
  • 1/2 cup red onion (chopped)
  • 4 eggs (scrambled)
  • 1 tablespoon milk
  • 8 ounces fresh spinach (rinsed)
  • 3/4 cup olive (kalamata or black) (optional)
  • 6 ounces goat cheese (can be substituted with feta cheese)
  • 1 teaspoon oregano (dried)
  • 1 teaspoon garlic (granulated or can use minced or fresh as well)
  • 1 tablespoon olive oil
  • salt and pepper

Instructions

  1. Warm saute pan with olive oil. Saute bell pepper, onion, sundried tomatoes, olives, garlic, salt and pepper in saute pan until onion and peppers are soft (about 8 min). Add thawed potatoes (follow directions on bag of Simply Potatoes for thawing instructions) and oregano (until potatoes are heated through). Add spinach and cook for 5 minutes until wilted. Remove pan from heat and add crumbled goat cheese and mix.
  2. In separate pan, scramble eggs with a splash of milk. Season with salt and pepper.
  3. Add scrambled eggs to top of hash. Enjoy!
