Ingredients

  • 2 1/2 cups milk
  • 1 cup sugar
  • 1/2 cup butter
  • 4 teaspoons salt
  • 1/2 teaspoon mace
  • 2 teaspoons grated lemon rind
  • 6 packages active yeast
  • 6 egg yolks
  • 2 whole eggs
  • 2 cups raisins
  • 2 cups blanched almonds
  • 10 cups flour

Instructions

  1. Combine milk, water, sugar, salt, and butter in a saucepan and heat until the butter just melts, then cool slightly.
  2. Mix the warm liquid with 1 cup of flour and yeast, then beat at high speed for 2 to 3 minutes.
  3. Add lemon rind, mace, eggs, raisins, and 1 1/2 cups of nuts to the mixture.
  4. Add remaining flour gradually to form a soft dough.
  5. Knead until the dough is satiny smooth.
  6. Let the dough rise until it doubles in bulk, about 1 1/2 to 2 hours.
