A flavorful Mexican-inspired baked chicken dish layered with crispy tortilla chips, creamy cheese, and spicy chilies, perfect for a hearty family dinner or casual gathering.

Ingredients

  • 4 chicken breast halves, cooked
  • 1 can cream of mushroom soup
  • 1 can Ortega chilies, mashed
  • 3 cups sour cream
  • 6 green onion tops
  • 1/2 cup milk
  • 1 package tortilla chips
  • 1/4 pound Jack cheese, grated
  • 1/4 pound Cheddar cheese, grated
  • avocado
  • taco sauce (red or green)

Instructions

  1. Bone the cooked chicken breasts and break the meat into pieces.
  2. Mix all ingredients except tortilla chips and cheeses together.
  3. Place tortilla chips in the bottom of a 9 x 13-inch baking dish.
  4. Pour the chicken mixture over the chips.
  5. Sprinkle grated Jack and Cheddar cheeses over the top.
  6. Bake at 350°F for about thirty minutes.
  7. Serve with chopped or mashed avocado on each portion and add red or green taco sauce.
