Ingredients

  • 8 flour tortillas
  • 1 lb ground meat
  • 1 medium onion
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Ro-tel diced tomatoes
  • 1 can Ranch Style Beans
  • 1 jar Taco Sauce
  • 1 package cheddar cheese

Instructions

  1. Brown the chopped onion and ground meat in a skillet, then drain excess fat.
  2. In a mixing bowl, combine the cooked meat and onion with the cream of mushroom soup, cream of chicken soup, diced Ro-tel tomatoes, Ranch Style Beans, and Taco Sauce.
  3. Bring the mixture to a boil over medium heat.
  4. Tear the flour tortillas into strips.
  5. Layer a portion of the tortilla strips in the bottom of a casserole dish, then add the meat mixture, followed by more tortilla strips.
  6. Repeat the layers as desired, ending with a layer of tortilla strips on top.
  7. Sprinkle grated cheddar cheese over the top layer.
  8. Bake the casserole at 400°F (200°C) for 30 minutes until bubbly and cheese is melted.
