Mexican Beef Stew

Ingredients

  • 1-1/2 lb. Ground Beef
  • 1 Onion, Chopped
  • 1/4 tsp. Garlic Powder or 2 Cloves
  • 1 Can Tomato Soup
  • 1-10 1/2 oz. Can Beef Broth
  • 1 Cup Water
  • 1 Medium Potatoes, Cubed Small
  • 2 Tbsp. Chili Powder
  • 1 Can Whole Kernel Corn, Drained

Instructions

  1. Brown beef, onion and garlic.
  2. Drain fat.
  3. Add soup broth, water, potatoes and chili powder.
  4. Bring to a boil.
  5. Cook until potatoes are tender.
  6. Add corn and heat until hot.
  7. Sprinkle with cheddar cheese.
  8. Good with tortilla chips and sour cream.
