Ingredients

  • 1 lb ground beef
  • 1 1/2 cups meal
  • 2 eggs
  • 1 cup sweet milk
  • 1 No. 2 can whole corn
  • 1/2 cup bacon drippings (optional)
  • 4 hot peppers
  • 1 lb Longhorn cheese or 10 slices American cheese
  • 1 large onion, grated

Instructions

  1. Fry the ground beef until cooked; drain excess fat.
  2. Set the cooked meat aside.
  3. Mix the first six ingredients: meal, eggs, sweet milk, canned corn, bacon drippings (if using), and hot peppers.
  4. Grease a skillet and pour in half of the batter.
  5. Sprinkle the cooked meat, Longhorn cheese or American slices, and grated onion into the skillet.
  6. Pour the remaining batter over the fillings.
  7. Bake at 350°F for 45 minutes or until done.
