Mexican Cabbage Casserole

A hearty Mexican-inspired cabbage casserole with seasoned ground beef, rice, and fresh vegetables, baked to perfection and topped with melted cheese for a comforting meal.

Ingredients

  • 1 lb hamburger meat
  • 1 medium head cabbage
  • 1 medium onion
  • 1 medium bell pepper
  • 3/4 cup dry rice
  • 1 package taco seasoning
  • 1 can chopped Ro-Tel tomatoes
  • 1 can tomato sauce
  • 1 can water

Instructions

  1. Chop the cabbage, onion, and bell pepper.
  2. Cook the hamburger meat in a pan.
  3. Add taco seasoning to the cooked meat.
  4. Layer the cooked meat in a baking dish, then add the chopped green pepper and onion on top of the meat.
  5. Add dry rice on top of the onion layer.
  6. Place the chopped cabbage on top of the rice.
  7. Pour the Ro-Tel tomatoes, tomato sauce, and water over the layers.
  8. Cover the dish with foil and bake at 350°F for 1 1/2 hours.
  9. Halfway through baking, stir the mixture thoroughly.
  10. Cover and continue baking until done.
  11. Remove from oven and sprinkle shredded cheese on top before serving.
