Ingredients

  • 1 chicken or 4 breasts
  • 2 cans cream of chicken soup
  • 1 can Ro-Tel
  • 1 cup grated cheese
  • 1/2 package Doritos

Instructions

  1. Boil and debone the chicken.
  2. Heat the cream of chicken soup and Ro-Tel in a boiler.
  3. In a casserole dish, layer crushed Doritos, cooked chicken, the heated soup and Ro-Tel mixture, and grated cheese.
  4. Bake at 350°F for 30 to 45 minutes until hot and bubbly.

Tips & Substitutions

For a creamier texture, consider adding a splash of sour cream or cream cheese to the soup and Ro-Tel mixture. If you prefer a spicier dish, use a hotter variety of Ro-Tel or add some diced jalapeños. If you don't have Doritos, any corn chips will work, but they won't have the same flavor. This dish can also be adapted into Cream Chicken Tacos for a fun twist.

Serving Suggestions

This Mexican Chicken dish pairs beautifully with a side of Mexican rice or a fresh green salad. For a complete meal, serve it alongside some zesty Mexican dip or corn on the cob. Consider offering toppings like sliced avocados or fresh cilantro for added flavor and freshness. It's perfect for a casual family dinner or a game day treat.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven at 350°F for about 20 minutes or until warmed through. You can also microwave individual portions, covering them to retain moisture, for about 2-3 minutes, checking for doneness.

Frequently Asked Questions

Can I use rotisserie chicken for this recipe?

Yes, using rotisserie chicken is a great time-saver! Simply shred the chicken and mix it with the other ingredients. This will add convenience while still delivering great flavor. Just ensure to adjust the boiling step accordingly, as the chicken is already cooked.

Is it possible to make this dish gluten-free?

Absolutely! To make this dish gluten-free, use gluten-free cream of chicken soup and ensure that the Doritos are labeled gluten-free. You can also substitute the Doritos with gluten-free corn chips, maintaining that crunchy texture without compromising on flavor.

Can I freeze the Mexican Chicken for later?

Yes, you can freeze this dish before or after baking. If freezing before baking, wrap it tightly in plastic wrap and aluminum foil. When ready to bake, allow it to thaw overnight in the refrigerator before baking as usual. If baked, reheat in the oven after thawing for best results.
