Ingredients

  • 2 cans cream-style corn
  • 1/2 to 1 whole chopped onion
  • 2 packages Mexican corn bread mix
  • 2 cans whole kernel corn
  • 2 eggs
  • 2 cups grated cheese

Instructions

  1. Saute chopped onions in a skillet with a small amount of oil until translucent.
  2. In a large bowl, combine cream-style corn, whole kernel corn, beaten eggs, Mexican corn bread mix, and the cooked onions.
  3. Mix well until all ingredients are evenly incorporated.
  4. Pour the mixture into a greased 13 x 9-inch pan or large casserole dish.
  5. Top with grated cheese.
  6. Bake in a preheated oven at 350°F (175°C) for 30 to 40 minutes or until the casserole is firm and golden.
