Ingredients

  • 8 hard boiled eggs
  • 1/2 cup cheddar cheese, finely grated
  • 1/4 cup mayonnaise
  • 1/4 cup salsa
  • 2 tablespoons green onions, diced
  • 1 tablespoon sour cream

Instructions

  1. Cut the hard boiled eggs in half lengthwise and remove the yolks.
  2. Place the yolks in a bowl and mash them well.
  3. Add mayonnaise, salsa, finely grated cheddar cheese, green onions, and sour cream to the bowl.
  4. Mix all ingredients thoroughly until smooth.
  5. Spoon or pipe the mixture back into the egg whites.
