Ingredients

  • 8 eggs
  • 1/2 cup shredded Cheddar cheese
  • 2 tablespoons chopped onion
  • flour tortillas
  • salsa
  • 2 tablespoons chopped green pepper
  • 1 to 4 drops hot pepper sauce
  • 1/2 cup leftover cooked taco ground beef

Instructions

  1. In a bowl, combine beaten eggs, shredded Cheddar cheese, chopped onion, chopped green pepper, and hot pepper sauce.
  2. Cook the mixture in a nonstick skillet, stirring until the eggs begin to set.
  3. Add the leftover cooked taco ground beef to the eggs and continue cooking until the eggs are completely set.
  4. Spoon the egg and beef mixture onto a warmed flour tortilla and roll it up.
  5. Top with salsa before serving.
