Mexican Egg Rolls

Ingredients

  • 2 cans green chili peppers
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 2 c. shredded Cheddar cheese
  • 1/2 tsp. ground cumin
  • 1/4 tsp. oregano
  • 12 egg roll wrappers
  • vegetable oil
  • picante sauce

Instructions

  1. Cook ground beef, onion and garlic in skillet; drain well.
  2. Add chilies, cheese and seasonings; stir well.
  3. Place 2 tablespoons of beef mixture on wrapper.
  4. Fold jelly roll fashion; brush edge of wrapper lightly with water.
  5. Press edges together and seal.
  6. Heat vegetable oil to 375° into large saucepan.
  7. Place 2 or 3 egg rolls in pan; fry 30 seconds on each side or until golden brown.
  8. Drain on paper towels.
  9. Serve with picante sauce.
