Mexican Fish Bake

- Cut the zucchini, yellow squash, onion, and tomato into bite-sized pieces.
- Place the fish steaks, skin side down, on a large sheet of tin foil.
- Put pats of butter on top of the fish.
- Add Mexican salsa and chopped vegetables over the fish.
- Create a tent with the foil to completely cover the fish and vegetables, leaving room to steam.
- Bake at 350°F for 30 to 40 minutes until the fish is cooked through.
- Serve with or over rice.
