Mexican Fish Bake

A flavorful Mexican-inspired fish bake featuring tender fish, fresh vegetables, and salsa, perfect for a hearty, baked seafood meal suitable for family dinners or gatherings.

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 1 onion
  • 1 tomato
  • 1/2 stick butter or margarine
  • 1 lb. fish steak (grouper, mahi mahi, red snapper, swordfish, or similar non-flaky fish)
  • 1/2 small jar Mexican salsa

Instructions

  1. Cut the zucchini, yellow squash, onion, and tomato into bite-sized pieces.
  2. Place the fish steaks, skin side down, on a large sheet of tin foil.
  3. Put pats of butter on top of the fish.
  4. Add Mexican salsa and chopped vegetables over the fish.
  5. Create a tent with the foil to completely cover the fish and vegetables, leaving room to steam.
  6. Bake at 350°F for 30 to 40 minutes until the fish is cooked through.
  7. Serve with or over rice.
