Ingredients

  • 3 lb. chicken, cut up
  • 1 tsp. salt
  • 1/2 c. flour
  • 1/2 c. fat
  • 1 small onion, chopped
  • 3/4 c. rice
  • 1 green pepper, chopped
  • 1 c. tomatoes
  • 1 tsp. chili powder
  • 2 c. water

Instructions

  1. Roll the chicken pieces in a mixture of flour and chili powder to coat evenly.
  2. Brown the coated chicken in hot fat until golden brown.
  3. Reduce heat and add chopped onion, chopped green pepper, tomatoes, rice, salt, and water.
  4. Cover and simmer until the chicken and rice are cooked through, about 40 minutes.
