Ingredients

  • 1 cup vinegar
  • 1 cup water
  • 1/4 teaspoon oregano
  • 1/2 teaspoon mustard seed
  • 2 bay leaves
  • 2 cloves garlic
  • 2 drops olive oil

Instructions

  1. Select vegetables that will stay firm after pickling, such as carrots, cauliflower, cucumber, celery, green tomatoes, small onions, peppers, or green beans.
  2. Prepare the vegetables by cleaning and cutting them into desired shapes if necessary.
  3. In a saucepan, combine vinegar, water, oregano, mustard seed, bay leaves, garlic, and olive oil.
  4. Bring the mixture to a boil to create the pickling brine.
  5. Pour the hot brine over the prepared vegetables in jars or containers, ensuring they are fully submerged.
  6. Allow the pickles to cool to room temperature, then seal and refrigerate for at least 24 hours before serving for best flavor.
