Ingredients

  • 1/2 lb ground beef
  • 1/4 cup chopped onion
  • 1/2 medium head lettuce, shredded
  • 2 cups tortilla chips, coarsely crushed
  • 1 avocado, diced
  • 1 small tomato, chopped
  • 1 cup shredded Cheddar cheese
  • 1 (1 lb) can kidney beans

Instructions

  1. Brown ground beef and chopped onion in a skillet over medium heat until cooked through.
  2. Drain excess fat from the beef mixture and chill if desired.
  3. Shred the lettuce and prepare the remaining fresh ingredients.
  4. In a large bowl, combine shredded lettuce, cooked ground beef, chopped tomato, diced avocado, kidney beans, and shredded Cheddar cheese.
  5. Top the salad with coarsely crushed tortilla chips just before serving.
