Ingredients

  • 4 strips bacon
  • 4 large potatoes
  • 1 onion
  • 1 small can chopped green chilies
  • 1 small can tomatoes
  • 1/2 tsp oregano
  • 1/2 tsp cumin seeds
  • 1/2 tsp garlic salt
  • grated cheese

Instructions

  1. Slice the potatoes thinly and lightly brown them in bacon grease; set aside.
  2. Combine chopped onions, green chilies, drained tomatoes, oregano, cumin, and garlic salt to make the sauce.
  3. Mix the browned potatoes with crumbled bacon and the sauce, then cook over low heat for 30 minutes, stirring occasionally.
  4. Transfer the mixture to a casserole dish and top with grated cheese.
  5. Bake in a 350°F oven until the cheese melts and is bubbly.
