Ingredients

  • 2 Tbsp. olive oil
  • 3/4 c. celery, chopped
  • 1/2 c. green pepper, sliced
  • 1/2 tsp. basil
  • 1 c. Monterey Jack cheese
  • 4 zucchini, thinly sliced
  • 1/2 onion, chopped
  • 1 1/2 tsp. picante sauce
  • 1 tsp. salt

Instructions

  1. In a large skillet, heat olive oil on high and sauté all vegetables for 3 minutes, stirring constantly.
  2. Add basil, picante sauce, salt, and pepper, then stir well.
  3. Cover and cook for 3 to 5 minutes.
  4. Add cheese and mix well before serving.
