Ingredients

  • 4 individual portions boneless, skinless salmon
  • 2 eggs, well beaten
  • 3/4 cup flour
  • 1/4 cup vegetable oil
  • 1 (15 oz) can tomato sauce
  • 1/4 tsp fresh black pepper
  • 1/2 tsp cajun spices
  • 1/4 cup black olives, sliced
  • 1/4 cup capers, drained and washed

Instructions

  1. Dip salmon in egg wash, then roll in flour.
  2. In skillet, cook fish in oil for about 5 minutes on each side.
  3. Do not move around in skillet.
  4. In separate pan, mix remaining ingredients and warm, but do not bring to a boil.
  5. Spoon a small amount of sauce onto serving plate.
  6. Lay cooked salmon in sauce.
  7. Spoon additional sauce over top of fish.
  8. Serve and enjoy.
