Microwave Beef Stroganoff

A creamy, savory beef stroganoff made with tender sirloin strips, mushrooms, and sour cream, all quickly cooked in the microwave for a comforting and flavorful meal.

Ingredients

  • 1 Tbsp. butter or margarine
  • 1/3 c. finely chopped onion
  • 1 garlic clove, minced
  • 1 lb. sirloin steak (1/2-inch thick)
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (4 oz.) can sliced mushrooms, drained
  • 2 Tbsp. catsup
  • 1 c. dairy sour cream

Instructions

  1. Combine butter, onion, and garlic in a 2-quart casserole dish. Cook, covered, on full power for 2 to 3 1/2 minutes, or until onion is tender.
  2. Trim excess fat from the meat.
  3. Cut the meat into thin, bite-sized strips.
  4. Add the meat to the casserole.
  5. Cook, covered, on full power for 3 minutes, stirring halfway through.
  6. Continue cooking, covered, for 10 to 13 minutes, or until the meat is cooked.
  7. Stir in the cream of mushroom soup, sliced mushrooms, and catsup.
  8. Heat, covered, on full power for 1 1/2 to 3 1/2 minutes, or until heated through.
  9. Stir in the sour cream.
  10. Heat, covered, on full power for 1 to 2 1/2 minutes, or until the sour cream is heated through.
  11. Serve over cooked noodles or rice.
