Microwave Beef Stroganoff
A creamy, savory beef stroganoff made with tender sirloin strips, mushrooms, and sour cream, all quickly cooked in the microwave for a comforting and flavorful meal.

- Combine butter, onion, and garlic in a 2-quart casserole dish. Cook, covered, on full power for 2 to 3 1/2 minutes, or until onion is tender.
- Trim excess fat from the meat.
- Cut the meat into thin, bite-sized strips.
- Add the meat to the casserole.
- Cook, covered, on full power for 3 minutes, stirring halfway through.
- Continue cooking, covered, for 10 to 13 minutes, or until the meat is cooked.
- Stir in the cream of mushroom soup, sliced mushrooms, and catsup.
- Heat, covered, on full power for 1 1/2 to 3 1/2 minutes, or until heated through.
- Stir in the sour cream.
- Heat, covered, on full power for 1 to 2 1/2 minutes, or until the sour cream is heated through.
- Serve over cooked noodles or rice.
