Microwave Brown Bread

A quick and hearty microwave brown bread with wholesome flavors of whole wheat, cornmeal, and molasses, perfect for a warm snack or side dish.

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1/2 cup yellow cornmeal
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 cup sour milk
  • 1/4 cup cooking oil
  • 1/3 cup molasses
  • 1/2 cup raisins

Instructions

  1. Shake the raisins with a tablespoon of the flour to coat.
  2. Combine all ingredients and pour into a well-greased 4-cup microwaveable measuring cup or bowl of similar size.
  3. Cover with plastic wrap, held in place with an elastic band.
  4. Microwave at 50 percent power for 12 minutes.
  5. Allow to sit for 10 minutes after microwaving.
  6. Run a knife around the inside of the bowl and invert to remove the bread.
  7. Slice and serve warm with baked beans.
