Ingredients

  • 4 large carrots
  • 3 Tbsp. packed brown sugar
  • 2 Tbsp. margarine or butter
  • 1 Tbsp. water
  • 1/4 tsp. salt
  • 1/8 tsp. ground cinnamon (optional)

Instructions

  1. Cut carrots into long thin strips and set aside.
  2. Combine brown sugar, margarine or butter, water, salt, and cinnamon in a 2-quart casserole.
  3. Microwave at high until margarine is melted, about 45 seconds to 1 minute and 30 seconds.
  4. Stir to blend the mixture.
  5. Stir in the carrots until coated with the glaze.
  6. Cover and microwave at high until carrots are tender, approximately 5 to 8 minutes.
  7. Stir once midway during the cooking process.
