Ingredients

  • 1 medium onion, chopped
  • 1 Tbsp margarine
  • 1 lb ground beef
  • 1 can stewed tomatoes
  • 1 cup cooked macaroni
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp cornstarch
  • 1 Tbsp water

Instructions

  1. Cook chopped onion and margarine in the microwave for 2 minutes.
  2. Add ground beef and cook for 4 to 5 minutes until browned.
  3. Drain excess fat from the mixture.
  4. Add stewed tomatoes and cooked macaroni, then microwave for another 4 to 5 minutes.
  5. Blend cornstarch and water to make a slurry.
  6. Stir the cornstarch mixture into the casserole and cook for 1 more minute until thickened.
