Ingredients

  • 1 slice bread
  • 1 lb lean ground beef
  • 1/2 tsp black pepper
  • 1 medium can pineapple chunks
  • 1/2 cup ketchup
  • 2 Tbsp vinegar
  • 1/2 cup water
  • 1 tsp salt
  • 2 Tbsp chopped onion
  • 1/2 cup bell pepper sliced thin

Instructions

  1. Save the juice from the can of pineapple chunks.
  2. Soak the slice of bread in water, then combine with ground beef, salt, chopped onion, black pepper, and drained bread mixture.
  3. Shape the mixture into meatballs.
  4. Cook the meatballs in a shallow pan at 375°F for 25 minutes, then drain them.
  5. Spread the drained pineapple chunks and thinly sliced bell pepper over the meatballs.
  6. Combine ketchup, vinegar, water, and the syrup from the pineapple, then pour the mixture over the meatballs and vegetables.
  7. Bake for another 15 minutes until heated through and glazed.
