Ingredients

  • 1 cup yellow cornmeal
  • 1 cup biscuit baking mix
  • 3 teaspoons baking powder
  • 1 cup milk
  • 2 eggs
  • 1/3 cup honey
  • 2 tablespoons vegetable oil

Instructions

  1. Mix cornmeal, biscuit mix, and baking powder in a large bowl.
  2. Add milk, eggs, honey, and vegetable oil to the dry ingredients.
  3. Stir just until the dry ingredients are moistened.
  4. Pour the batter into an 8-inch square microwave-safe baking dish.
  5. Cook on medium (50%) power for 10 minutes.
  6. Rotate the dish if the bread is rising unevenly.
  7. Cook on high (100%) power for an additional 2 to 4 minutes or until the bread tests done.
  8. Remove from microwave and let stand for 5 minutes before serving warm.
