Ingredients

  • 2 slices whole wheat bread
  • 1 teaspoon olive or vegetable oil
  • 1 large plum tomato
  • 2 ounces mozzarella cheese
  • 1 tablespoon chopped fresh basil
  • dash of pepper

Instructions

  1. Drizzle 1/2 teaspoon of oil onto one side of each slice of toasted bread.
  2. Top each slice with half of the tomato slices and 1 ounce of shredded mozzarella cheese.
  3. Sprinkle each sandwich with 1 1/2 teaspoons chopped fresh basil and a dash of pepper.
  4. Place the sandwiches on a microwavable plate or large paper plate, cover with wax paper, and microwave on Medium-high (70%) for 2 minutes until the cheese is melted.
