Ingredients

  • 4 slices bacon
  • 3 cups potatoes, peeled and cut into 1/4 inch cubes
  • 1 medium onion, chopped
  • 2 cans (6 1/2 oz.) minced clams
  • Reserved clam liquid
  • 1/4 cup flour
  • 2 cups milk
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper

Instructions

  1. Place bacon in a 3-quart casserole.
  2. Cover and microwave at High for 3 minutes.
  3. Drain all but 2 tablespoons of fat from the casserole.
  4. Add potatoes and chopped onion to the casserole.
  5. Pour the reserved clam liquid into the casserole.
  6. Cover and microwave at High for 7 to 9 minutes or until potatoes are fork-tender, stirring once.
  7. Combine flour and 1/4 cup of milk to make a slurry.
  8. Add the flour mixture, remaining milk, salt, and pepper to the casserole.
  9. Do not cover; microwave at High for 8 to 10 minutes or until thickened, stirring several times.
  10. Stir in the drained clams and light cream.
  11. Microwave at High for 2 to 4 minutes or until heated through.
